Veggie
4 CARROTSA TURNIP
HALF WHITE CABBAGE
Spices
CUMIN TO TASE
a teaspoon MUSTARD SEEDS
pinch MEDIUM CURRY
TYME
ROSEMARY
BAY LEAF
optional, good for colour - SAFFRON
a pinch TUMERIC
To go with it
- A DOLLOP OF YOGURT SAUCE MADE OF:
GREEN YOGURT, LEMON JUICE, CORIANDER OR PARSLEY OR BOTH, SALT, CUMIN AND CRUSHED GARLIC
- WHOLEMEAL COUS COUS
Add a table spoon of extra virgin olive oil to a large pan and add the vegetables together with one teaspoon of mustard seeds. Cook for 5 minutes over a medium heat.
Add water to just cover the vegetables and the spices. It's better to keep rosemary (and thyme if you are using a dry one) separate, possibly in a muslim, so that you do't have stalky bits floating around in your soup. Add salt to taste
In the mean time prepare the yogurt sauce mixing all the ingredients and the cous-cous and keep it warm.
When veg are cooked through, it'll take about 20 minutes, remove the bay leaf and blend everything.
Adjust salt.
Serve like shown in the picture with sprinkled herbs (parsley, coriander) a little drizzle of ex.vir. olive oil.
